This is one of the quickest and easiest desserts to prepare and even in it's simplicity, it comes off as very sophisticated and decadent. The bite-sized pieces go great when served with coffee for your dinner party. Every time I serve this, people love to take some home, so there's never any left. You can crush it into smaller pieces and serve with frozen yogurt or ice cream. Sure, you can buy premium chocolate with nuts and fruit from a candy shop, but I promise you, it will be much more expensive and you will not get the same props as you would if you made it yourself. And frankly, yours will taste better also.
- 2 11 1/2 oz. bags of 60 percent Cacao Bittersweet Chocolate Chips (I prefer Ghirardelli)
- 1/2 cup of salted roasted organic almonds - chopped
- 1/4 cup of salted shelled organic pistachios - chopped
- 1/4 cup of salted shelled organic pistachios - ground
- 1/4 cup of dried organic cherries or blueberries- chopped
- Parchment paper
Evenly place cherries, chopped almonds and pistachios on a parchment paper covered cookie sheet. Place all chocolate chips in a thoroughly cleaned and dried glass bowl. Place bowl over a small pot of hot (not boiling) water and continuously stir until all chips have melted. Be careful not to allow any water to go into the chocolate. Remove bowl, pour chocolate and completely cover the cherries and nuts on the parchment paper. Before the chocolate hardens, sprinkle the ground pistachios over the top of the chocolate. Place chocolate in the refrigerator for an hour or until the chocolate completely hardens. Remove from the fridge, then wrap cookie sheet with clear wrap, then use a hammer to break chocolate into 1 inch bite sized pieces. Serve immediately or store in zip refrigerator bags in the fridge.
With the base of dark chocolate, this dish is off to a great start. Add
dried cherries and you have the perfect amount of fruity taste. Then
the salted pistachios and almonds add the right amount of crunch, and
the salt intensifies the flavor of each piece. The bright green
dusting of pistachio will make any guest curious and want to partake.
